Blended Vegetable Carrot Soup

Ingredients:

  • 1kg Carrots
  • 500gram Potatoes
  • 500gram Leeks
  • 1 Can Tomatoes 500ml
  • 4 spring onions
  • 2Tsp Caraway Seeds, fresh Parsley (or/and Ginger)
  • Salt, Pepper, 4cloves of Garlic
  • Parmesan, Roasted Onions, Herb Curd
  • 1Tsp Olive Oil

Preparation:

  • Wash vegetables and cut them small
  • Add them in big pot and boil for 10 Minutes in salted Water
  • Blend them
  • Put back to Pot
  • Add Can Tomatoes, 2-3 Tsp Salt, Pepper, Parsley, Caraway Seeds, Olive Oil
  • Let it steep for 5 minutes

Serve and refine with Roasted Onions (or/and Parmesan) and Tblsp Herb Curd

This Quantity should be enough for 6 big Portions
